St. Croix Ale is truly a one-of-a-kind beer that achieves the characteristics of both an ale and a lager, with a hint of maple in a slightly hoppy finish. It's brewed in a classic American West style from the 1800s that employs cold-fermenting lager yeast at warmer ale-fermenting temperatures. After fermentation, the beer is aged cold for several weeks. This hybrid process gives the beer the fruity, estery flavors of an ale and the smoothness of a lager.
Pale
American two-row, crystal and Carapils malts are balanced with generous
amounts of Northern Brewer and Cascade bittering hops. Pure Wisconsin
maple syrup is added in the brew kettle, and whole Czechoslovakian Saaz
hops are used for dry-hopping after fermentation for added hop aroma.

Serrano Pepper Ale won 1st Place in Chile Pepper Magazine's 1998 Fiery Food Challenge. The unique ale took home the magazine's prestigious "Golden Chile" trophy in the international competition's "Most Unusual" category. The fete drew over 275 entries from around the world. Chile Pepper Magazine is the hot and spicy food industry's leading publication. We're quite proud of this landmark achievement. Being the first beer to ever win in an international food competition such as the Fiery Food Challenge sets us apart from the pack a bit. The pilot brew of Serrano Pepper Ale won a gold medal in the 1992 Minnesota Brew Fest, Minnesota's largest homebrew competition and our first commercial batch of the same beer has taken top honors in a major competition once again.
